That's a good thought exercise. I'd probably shoot for two 8-inch woofers and focus on distortion. Start with SB and Wavecor woofers and do a bit more research over at HiFi Compass. I definitely like the idea of a ribbon or AMT tweeter. I liked the new Radian AMT from Iowa last year and the old AST that Jim and Curt used. Probably few others I've forgotten about.
I haven't used or heard that 8" version, but its bigger brother, the 10" 830668, is a really good driver. I would think a pair of those 8" in a TMWW tower could be quite nice.
Is there a better woofer for use with the orginal ESS AMT-1 tweeter? (I'm thinking a Pro Audio Woofer w/ higher sensitivity would be better but I have no experience with the original woofer)
I just ran the WinISD and did some comparisons - The ESS 10" has superior LF extension but lacks SPL/sensitivity which is probably why they can cross the AMT-1 as low as 600 Hz to it as the AMT-1 needs to be padded like crazy which reduces strain and distortion.

I have the Dayton PA310-8 on hand for testing soon - That 15" FaitalPro looks interesting but just a bit large for my space so the mention of a 12" has me looking into it.

I believe JR, Bryan, Craig K, and I heard that Tang Band 8" full range at Axpona. It was part of an OB WFW with two Alpha 15's.
BK and I both sat on the floor to get on-axis, much to the amusement of the rest of the audience. Good speaker.

I used them in these after removing my precious HM210's from OB duty. Decent drivers for what I used them for.

Steve, I think any large pro audio woofer that can get up to 800 would be good, just depends on the coin. The 15pr400 is a running favorite. For the money, I would try this one madisound has on sale. Pity about the Beast Mode tweeter - but it is still a great tweeter at that price.
I was cruising Grainger for 1/2" felt. looks like they may be clearancing the current stock.
The 12" x 12" x 1/2" thick F13 looks like a pretty good deal.
